Spicy Bacon and Pasta Salad

A filling lunch that dances on your tongue.

Ingredients

  • 1/2 onion diced
  • 125 g bacon rashers diced
  • 2 pinches dried basil leaves
  • 2 pinches black pepper
  • 1/4 tsp chilli paste
  • 1 tbs parsley chopped
  • 1 celery stalk thinly sliced
  • 1 carrot grated
  • 250 g penne cooked drained
  • 210 g corn cob kernels drained
  • 1 cup mayonnaise
  • 1 frying pan

Directions

  1. Lightly spray a frying pan with oil and fry the bacon, onion, chilli paste, basil and pepper together until the onion turns translucent and the bacon is slightly browned. Remove from heat and cool.
  2. Mix with all remaining ingredients, adding the mayonnaise last, only using enough to coat the other contents lightly.

Notes

Makes 2 x full 1 litre boxes.
