- 500 g chicken thigh fillet skinless
- 1 onion medium
- 400 g sweet potato
- 410 g can tomato purÃ©e
- 180 mls thickened cream
- 40 g KEEN’S Butter Chicken Recipe Base sachet
- 1 handful fresh coriander *to garnish
- Heat oil in a large frying pan and cook chicken until browned. Remove chicken from pan and set aside. Add onion and sweet potato to the pan and cook, stirring for 5 minutes.
- Mix KEEN’S Butter Chicken Recipe Base with tomato purÃ©e until well combined. Pour over vegetables and return chicken to pan. Cover and simmer for 15 minutes or until chicken and vegetables are cooked through.
- Stir through cream and serve over rice with freshly chopped coriander.
