- 10 cloves garlic, minced
- 3 quarts water
- 1/2 cup kosher salt
- 1/4 cup black peppercorns, plus
- 2 teaspoons black peppercorns
- 1/4 cup sugar, plus
- 2 teaspoons sugar
- 1 1/2 teaspoons dried thyme
- 1 teaspoon whole allspice
- 1 bay leaf
- Bring all ingredients to a boil in a large saucepan, reduce heat and simmer for 15 minutes.
- Allow to cool completely before using.
- Large heavy duty sealable plastic bags work the best.
