Homemade Healthy Muesli Slice

Chock-full of “the good stuff” – the muesli bars taste amazing and contain a lot less sugar then the commercial variety

Ingredients

  • 1/2 cup quinoa
  • 1 cup oats
  • 1/2 cup coconut
  • 1/4 cup chia seeds
  • 2 tbs sultanas
  • 1/2 cup frozen mixed berries
  • 3 tbs brown sugar
  • 1/2 cup honey
  • 1/2 cup coconut oil
  • 1 20cm x 20cm slice pan

Directions

  1. Preheat oven to 160C degrees. Line a 20cm square baking pan with baking paper.
  2. Mix all ingredients together in a large bowl. Press mixture into prepared pan.
  3. Bake for 25 minutes. When slice is cool you can cut into squares and drizzle with melted chocolate (optional).

Notes

You can use fresh or frozen berries of your choice – raspberries and blueberries are nice.
