Easy Tempura Batter

A light batter that can be used for fish, seafood or vegetables.

  • 1 egg
  • 1 cup cold water
  • 3/4 cup plain flour
  • 1 pinch bicarbonate of soda


  1. Beat the egg and icy cold water together until light and fluffy.
  2. Add the flour and bicarbonate of soda to the egg mixture and mix together quickly. Do not over-beat mixture.
  3. Use to coat fish, prawns, scallops or vegetable slices.


Use icy cold water or crushed ice.

Batter should be very thin, if it is too thick add some more iced water. Always make sure your frying oil is very hot, I use canola oil. Use icy cold water or crushed ice.
